Guys I have got this very quick and easy recipe today for you. Cheesy mozzarella potato sticks, sounds very delicious, right? Trust me they are. I am not going to make this recipe very long because it’s a very quick and easy recipe. And to be very honest mozzarella potato sticks are not a classic dish or something that I will keep going on and on about them. So let us get started with the components of mozzarella potato sticks and then we will jump into the recipe. 

The Potato Shell

So we’ll be using some mash potatoes for the outer covering of mozzarella sticks and that is because eating just mozzarella sticks is kind of boring I believe. It is just too cheesy to be very honest even though it’s deep-fried and you can add a lot of customised dips but it’s still pretty boring and I think you would agree. 

So for the outer shell, we will boil potatoes and then after that mash the potatoes and add some chopped onions, capsicum, garlic, and some seasoning like salt and pepper. That’s pretty much it and since your potatoes might be different from mine because there is a lot of variety that is available out there. So in case your mash potato mixture is not very well binding with your mozzarella sticks just add a little corn start and it should work out just fine. The next thing we will talk about is the mozzarella for these mozzarella potato sticks.

The Mozzarella

The second most important thing for this recipe is mozzarella cheese. Now in traditional mozzarella sticks it just too cheesy and I don’t really like that. And I bet that you don’t like that either. So, in this case, we will just cut the mozzarella into 1 centimetre thick sticks and cover it with the mashed potato mixture we made to balance the mozzarella and potato shell. In the traditional recipe we just use mozzarella and it’s just going a little overboard with the cheese.

The Crumb Coating

Here is the most exciting part about this recipe and trust me I have got the perfect hack for an amazing crunchy crust. That is corn flakes. If you follow my blog you know that I have always preferred cornflakes over cornstarch or bread crumbs. That is mainly because it is 10 times healthier than any other option and it gives a better crunch.

And just to keep this recipe vegetarian I have not used any egg for crumb coating. Instead, I have made a slurry out of some refined flour and I dip my mozzarella potato sticks into that and then later on coated with the corn flakes powder. To make the cornflakes powder just take a mixer grinder jar and add 2 handfuls of cornflakes and grind it until it’s a coarse powder. Although if you want a very thick crust you can crumb coat it twice and it is very healthy too.

Frying the Mozzarella Potato Sticks

It can be a little tricky because getting the right temperature for the mozzarella potato sticks is very important. Now I am calling it tricky because you have two layers that are the external cornflakes coating and potato shell and then comes the filling that is basically mozzarella. So you want that mozzarella to melt and at the same time, you want that crust to be crunchy and golden brown. So keeping your oil at the right temperature is a very important thing for this recipe and I would recommend a temperature around 200 degree Celsius to 210 degrees celsius.

Ingredients

For Filling

  • 2 large Potatoes
  • 1 medium Onion
  • 1 capsicum
  • 3 Chillies
  • 1 tbsp Corn Starch
  • Salt as required
  • Pepper as required

For Coating

  • 2 tbsp All-purpose flour
  • 3 tbsp Cornflakes powder

Instructions

  1. So the first thing you will do is put your potatoes for boiling. There are various ways of boiling and potatoes but I guess pressure cooker is the best way. 
  2. After they are done boiling peel them and then mash them. Now add some chopped onions, chopped chillies, chopped capsicum, and then add a little Salt and pepper according to your taste and mix everything.mash potato
  3. Once you are done mixing check for the consistency and if the potato mixture is not binding just add a little corn starch and it will work out just fine.
  4. Then cut your cheese into sticks which are one centimetre thick and then cover them with the mash potato mixture that you had made earlier. 
  5. Now to crumb coat them take some cornflakes powder and refined flour slurry. First, dip the potato mozzarella sticks into the slurry and then cover them with the corn flakes powder. crumb coating
  6. Once you are done coating them now it's time to deep fry them until golden brown and crispy at 210 degrees celsius.mozarella potato sticks
  7. And your mother potato sticks are ready to serve with some mayonnaise or ketchup.

Notes

  • Make sure the oil temperature is right.
  • Always check for seasoning in the mashed potato itself.
  • You can use eggs in place of slurry if you want.
