The Potatoes

To be very honest you can go for any variety of potatoes. There is no hard and fast rule about choosing your potatoes for this roasted garlic potato strips or roasted garlic french fries. But new potatoes would do a better job than old ones. That is mainly because new potatoes tend to be crisper since they are more starchy. Although the old potatoes work just fine and you don’t need to worry about the taste at all it will just come out amazing.

So for preparing the potatoes you just need to peel them first. Once you peel the potatoes cut them into 1 cm thick strips and you are good to go. Although make sure if you are using the potatoes was after a while and not immediately dressing them with oil. Just take some water and dip them in that so that they wrong turn dark in colour. That happens mainly due to oxidation of the potatoes when they are left out in the air after peeling.

The Dressing

So I used a couple of spices and some olive oil. Since I’ve already mentioned that these roasted garlic potato strips are going to be very healthy. So I used olive oil but you can feel free to use your choice of oil. But again who doesn’t like olive oil and I’m pretty sure you will just go for olive oil rather than any other oil.

So in a small bowl, you need a couple of ingredients like chilli powder, chat masala, oregano, a little salt, pepper, and some finely chopped garlic. Then add 2 tablespoons of olive oil and give everything a nice mix until well combined. Once everything is combined with the oil add that mixture to your potatoes and with your hands dress them nicely make sure each and every potato strip is covered with the dressing.

The Garlic

After potato garlic is probably the second most important ingredient in this recipe. These roasted garlic potato strips are packed with garlic flavour and makes a huge amount of difference. Garlic provides a lot of flavour to the roasted garlic french fries and also gives an amazing Aroma to the quick recipe.

Roasting the Potatoes

Roasting the potatoes will be completely up to you and it also depends on the variety of potato you have used. I can’t really give you the exact amount of time it takes for cooking the potatoes. But all I can say is under ideal conditions it took 35 minutes for me to roast them at 230 degree Celsius. So I am guessing by that you can kind of adjust the temperature and time here and there.

Also, the variety of potato is used where new, so I roasted them directly at 230 degree Celsius for 35 minutes and got really crispy roasted garlic french fries. But if you are using old potatoes I would highly suggest you roast them at 250 degree Celsius for 20 minutes and then reduce the temperature to 190 degree Celsius for the next 15 minutes.
