This was originally a recipe in which I used all-purpose flour. But few days back I actually ran out of all-purpose flour and then I didn’t have a choice and had to add whole wheat flour. Although it was an accidental discovery, this recipe worked really well with whole wheat flour as well. Well, my answer to that is banana bread is not a very glutenous sponge in the first place. Also, oil has been a Baker’s first choice for long time that is because it gives a more moist sponge and the texture comes out much better. Although butter always gives you a better smell and better taste. I know it is a difficult choice, but you can choose according to your needs.
